The course structure: 

This course is structured into seven parts. Day 1, Day 2, Day 3, Day 4, Day 5, Day 6 and Day 7.

Day 1: We will be dealing with the theoretical zobo making. There will be a lot of reading. This is very important because it builds the foundation for all we will be learning all through this program.

We will look at all the ingredients and types of zobo drink.

Day 2: We will be looking straight into the practical sessions, The focus will be on zobo productions, here will be making several types of zobo you will learn new recipes and also learn how to mix them, Not only that, you will learn how to use the right preservatives for your drink.
Zobo tea, Zobo wine, Zobo cocktail and martini.

Day 3: We will be teaching you how to make Tigernut milk, types of nuts to use and six variants of Tigernut milk and the right variants for various clients.

Day 4: We will be teaching how to make Tigernut Pap, Tigernut flour, Tigernut Pulp for swallow, mistakes to avoid and branding.

Day 5: We will look at 2 method of yoghurt production and soy milk production.

Day 6: How to use Canva, Branding and marketing.

Zobo Tea Bag Production Process/Procedures

ZOBO TEA is the latest sheriff in town.

It’s made just like our Lipton bag and it’s ready to use in less than 100 secs.

For zobo tea bag, all you need to do is grind all dried ingredients together, put them in a bag and seal it.


  • Flavor of choice

Zobo Tea Bag Production Process/Procedures

Date syrup, also known as date molasses or date honey, is a thick, dark syrup made from dates. It is a natural sweetener that is widely used in Middle Eastern and North African cuisines.

Date syrup is made by cooking down dates and extracting their juices to create a thick, rich syrup with a deep caramel-like flavor.
To make date syrup, you will need the following ingredients and equipment:


  • Dates
  • Water


  • Saucepan
  • Blender or food processor
  • Fine mesh strainer or cheesecloth
  • Airtight container for storage


  • Wash your dates in cold and fresh water and soak it overnight or for atleast 6 hours.

  • When soaked, remove the seed and blend the dates with the same water you use in soaking it.

  • Use your muslin clothes to strain the mixture into a finer texture and remove particles.

  • Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 15-20 minutes.

  • Keep starring with a spatula until it golden brown.

  • Allow the date syrup to cool completely, then transfer it to an airtight container for storage. Date syrup can be stored in the refrigerator for up to a month.

    – Don’t use too much water in soaking and blending
    – Don’t let it get too brown when on fire


To make mixed fruit-flavored zobo, you will need the following ingredients to add the already sweetened zobo from the last class.

Mixed fruit such as:

  • Apple
  • Watermelon
  • Orange
  • Cucumber (optional)
  • Banana (optional)

The fruits are blended and added with the same procedure as the pineapple.

Measurement guide for 10 litres of Tigernut milk (19-21 bottles)

  • 1 paint of Tigernut

  • 1 small custard paint of dates

  • 5 medium ginger

  • 3 medium coconut or 2 big coconut

  • 10 litres of water


  • Do not exceed 10 litres of water

  • For cinnamon flavor, use 3 sticks or 2 tablespoon spoon of powdered cinnamon

  • Use fresh ginger only

  • 6 mints leaves for every 50cl

  • 1 banana finger for every 1 litre

  • Cinnamon flavor needs more ginger unlike other flavors

The basic tigernut milk recipe involves blending tigernuts with water and straining the mixture. There are several variants and flavors you can add to enhance the taste.

These variants taste delicious, but they also give us additional nutritional value and that’s why I will teach you top selling variants.

1) Extra Sweetened:

Extra Sweetened Tigernut milk is made of tigernuts, dates, coconut and ginger.

It’s so rich in fibre that it aids digestion. It contains healthy fats like oleic acid that promote healthy heart.

Tigernut milk has a relatively low glycemic index, meaning it does not spike blood sugar levels rapidly. This makes it a suitable option for individuals who need to manage their blood sugar levels. This includes those with diabetes or those aiming for balanced energy throughout the day. So you can call it your go-to energy drink.

Due to its low calorie content and high fiber intake, it can serve as a great choice for weight management.

2) Ginger and cinnamon mix:

Ginger and cinnamon mix is made with tigernuts, coconut, ginger, cinnamon, and dates.

For every 1 paint of tigernut:

  • 1 derica of millet
  • 1 derica of yellow corn
  • Date to sweeten( 1 derica or more)
  • 3 big coconuts
  • 4 cups of groundnut
  • 1 ginger
  • 2 handful of cloves.

Yoghurt Pap Production Process/Procedures

To make tigernut flour, tigernuts shaft that are gotten from tigernut milk production are thoroughly washed again with a muslin cloth until it’s rid of ginger, dates and coconut. It’s then sun+dried and ground into a fine powder. It has a light texture and can be used in a variety of recipes, including baking, cooking, and as a thickening agent in sauces and gravies.

Tigernut flour is often used in gluten-free and paleo recipes as a substitute for wheat flour. It can be used to make cookies, cakes, bread, pancakes, and other baked goods. Zobo Chapman Production Process/Procedures

To make Zobo Chapman, you will need the following ingredients:

  • Zobo Drink Concentrate (made from dried hibiscus petals)
  • Fruits (such as oranges, lemons, and cucumbers) (optional)
  • Soda water or lemon-lime soda
  • Fanta or Mirinda

Here's a general recipe for preparing Zobo Chapman:

In a large pitcher, combine the Zobo concentrate, orange and teem soda . If you prefer a sweeter taste, you can add some sugar to the mixture as well.

Stir the ingredients until well combined. Place the pitcher in the refrigerator and let it chill for at least an hour to allow the flavors to meld together.

When you’re ready to serve, add ice cubes to individual glasses. Pour the Zobo Chapman mixture into each glass, leaving some room at the top.

Finally, top up each glass with soda water or lemon-lime soda to give it a fizzy kick. Stir gently to mix everything together.

Zobo Chapman is typically garnished with slices of oranges, lemons, and cucumbers for an extra visual appeal. You can also add a sprig of mint as a garnish if desired.

Certainly! A Zobo cocktail is a delightful alcoholic beverage that incorporates the flavors of the traditional Nigerian Zobo drink. It combines the tangy and fruity notes of Zobo with the addition of spirits for a unique twist.


  • Zobo Drink Concentrate (made from dried hibiscus petals)
  • Vodka or rum (your choice)
  • Simple syrup or sugar
  • Lime juice
  • Ice cubes
  • Fresh mint leaves (for garnish, optional)


Combine the Zobo concentrate, vodka or rum (use your preferred choice and amount based on your desired strength), lime juice, and simple syrup or sugar to taste. The simple syrup helps balance the tartness of the Zobo. Adjust the sweetness according to your preference.

Add a handful of ice cubes to the shaker and shake vigorously for about 15-20 seconds to chill the mixture.

Prepare your serving glass by adding a few ice cubes.

Strain the cocktail mixture into the glass, discarding the ice cubes and any solids from the shaker.

Garnish the Zobo cocktail with a sprig of fresh mint leaves for added freshness and aroma.

Give the cocktail a gentle stir with a cocktail stirrer or straw.

N.B: I just used my cup in the absence of a cocktail shaker.

Soy Milk Production Process/Procedures

Soymilk is a plant-based alternative to dairy milk that is made from soybeans. It is a popular choice among individuals who are lactose intolerant, allergic to dairy, or following a vegan or vegetarian lifestyle.

To make soymilk, soybeans are soaked, ground, and then mixed with water. The mixture is then strained and to separate the liquid (soymilk) from the solid residue.

After that it’s heated for over 40 mins to bring the milk to well cooked form.

You can add sweetners, flavors or vitamins to enhance the taste and nutritional value.

Soymilk has a creamy texture and a slightly nutty flavor. It is a good source of protein, calcium, and other essential nutrients. However, it is important to note that soymilk does not naturally contain the same levels of calcium and vitamin D as cow’s milk, so some brands fortify their products to make up for this.
